This recipe is for fermented salsa. This means that it's yummy and healthy as the lactobaccili are really good for your digestive health.

Equipment

  • 1 Preserving jar A wide-mouth flip-top jar with a rubber or silicone ring is ideal
  • 1 sauerkraut stomper This can be wooden or stone, a pestle can work well.

Ingredients
  

  • 6-8 tomatoes ripe & chopped
  • 1 onion finely chopped
  • 2-3 cloves garlic minced
  • 1-2 jalapeno peppers or any other chilli you can find, finely chopped
  • coriander leaves chopped
  • 1-2 limes juiced
  • 1 tablespoon celtic sea salt

Optional vegetables for variety

  • paprikas chopped
  • cucumbers chopped
  • carrots chopped

Instructions
 

  • Mix all vegetables and herbs in a large bowl
  • Add the lime juice and mix
  • Add the salt and mix
  • Leave it standing for about 30 minutes so that the cells can start breaking down and the fluids start flowing
  • transfer to the preserving jar and press it down firmly as you want to make sure that there are no air pockets as lactic acid fermentation is an anaerobic process.
  • Make sure that the room between the vegetables and the top of the jar is at least 2.5 cm or 1 inch.
  • Leave it at room temperature for about 3 to 4 days to ferment. You will see some bubbling, this means the process is working.
  • After this transfer it to cold storage to slow down the fermentation process. You can leave it longer on the counter to ferment at room temperature when you'd like it more tangy.
