  • 1 Preserving jar 2 litre size

Ingredients
  

  • 500 grams beetroot peeled and cubed or chopped coarsely
  • 250 ml whey home made by dripping yoghurt
  • 2 litres water filtered
  • 1 tbsp celtic sea salt

Instructions
 

  • Put the beetroot, whey, salt and water the preserving jar
  • Stir well
  • Cover securely with the lid
  • Keep at room temperature for 2 days before moving to the refrigerator

Reuse of the beetroot for second brew

  • When most of the liquid has been drunk you can refil the container with another amount of 2 litres of water
  • Cover securely with the lid
  • Keep at room temperature for 2 days before moving to the refrigerator.
  • The brew will be slightly less strong than the first.

After second brew

  • Get rid of the beetroot. You can keep some of the fluids and use that instead of whey for further batches.

Notes

The Kvass stays well in the refrigerator for a good 2 weeks.
It's possible to use 250 ml of water kefir instead of whey, this will give a bit of a different product but can be useful for those who react strongly to dairy products.
